When asparagus is in season, all I can see is green — and envy has nothing to do with it. Quite the opposite actually.We have a pretty long growing season here in California, so I enjoy it as much as I can for months at a time.
This easy Chicken Stir Fry with Asparagus, Scallions and Pistachios is a favorite among my Los Angeles personal chef clients. It’s quick to marinate the chicken and chop all the vegetables, and since it’s a stir fry, it cooks in minutes.
What cut of chicken?
I like to use chicken thighs in this dish. I know, very strange. But I love them in general because they are so much more flavorful. Additionally, they don’t dry out. However, I’ve made the dish in every number of ways, like using thinly sliced chicken breasts or cubed chicken tenders. If you use the latter two, you’ll just need to quickly cook them and not brown them like I do the chicken thighs.
A delicous low carb recipe
The recipe is also fantastic for people who are following a ketogenic diet or trying to cut down on carbohydrates in general. The pistachios give it some good extra fat and protein. The dish is satisfying enough that you don’t miss the rice. You can either enjoy it on its own, or serve it with a broccoli, cauliflower, or other vegetable rice. Or if you don’t care about carbs, just enjoy it over your favorite kind of rice like aromatic jasmine or basmati.
The fresh minced ginger gives this dish a great kick. If you love it as much as I do, feel free to add more than what the recipe calls for. I also like to top off my bowl with some chili-garlic sauce. It’s a great punch of heat and flavor.

Ingredients
- 1 pound chicken thighs, cubed
- 1 pound asparagus
- 8 scallions
- 2 tablespoons rice vinegar, (more to taste)
- 1 tablespoon ginger, minced
- 2 garlic cloves, minced
- 2 teaspoons sesame oil
- 4 tablespoons soy sauce
- 1 cup pistachios, shelled
- 1 tablespoon neutral oil
Instructions
- Pat 1 pound of chicken thighs dry, and cube them.
- Marinated chicken in 1 tbs. rice vinegar, ginger, garlic, 1 tsp sesame oil, 2 tbs soy sauce for 1 hour.
- In a large skillet (or wok) in a neutral oil over medium high heat, brown chicken on all sides.
- Add in scallions and asparagus and cook quickly for 1-2 minutes.
- Add in the rest of the soy sauce, rice vinegar, and sesame oil. Adjust for taste.
- Stir in pistachios and cook for an additional 30 seconds.
- Serve over rice, or a vegetable rice for a lower carb option.
Notes
If you decide to use chicken breasts or chicken tenders, sear them quickly and then remove from the pan. Add in other ingredients and add the chicken back in at the end.
